Scale build up on evaporators or condensers will slow ice production to an absolute crawl and when combined with the heat of summer, could end up doing serious damage to the machine itself. Ambient Room Temperature:

The higher the room temperature, the the harder your ice machine(s) will have to work to produce ice. Particularly in places like a busy restaurant kitchen, warehouses, and non-air conditioned areas, the ambient temperature of a room can heat up the water lines causing commercial ice machines to struggle or in some cases cease to make quality ice. High temperature areas also put an enormous amount of strain on compressors which could lead to costly repairs. Ideally, commercial ice machines should be put in an area that has good airflow if possible so that even if the air around it is warm, it can self cool through the air intake.

Adequate Spacing:

Most all commercial ice machines need adequate space around them to effectively self cool unless of course they are water cooled. Placing an ice machine near another appliance that generates heat will make it much more difficult to cool. Especially in restaurant kitchens where ovens and grills tend to generate an enormous amount of heat, commercial ice machines should be placed as far away from them as possible. Also making sure that the ice machines’ intake vents are cleaned regularly so that airflow is not restricted in any way will help keep ice production up.
